So I went on a wonderful trip with friends to Mammoth Mountain. Simply beautiful area. However I never went skiing due to insanely long lines and high lift ticket prices. Instead I spent my days there sledding, cooking, watching the Olympics and just relaxing. I did however take a gondola ride to the top of the mountain and climb the last 100 feet or so to the summit. The feeling you get while standing on the top of the biggest mountain in sight was amazing! I made breakfast our first day there and lunch and pre dinner snack the next.
I made scrambled eggs with bell peppers, onions, cilantro, and cheese. Also known as Huevos a la Ginny! I added bacon and french toast as well, it was a hit!
On sunday I cooked this killer cowboy stew. It was 3 pounds ground beef, 2 cans of corn, 2 cans of diced tomatoes, and 2 cans of black label ranch beans! It simmered in the crock pot for hours and I then served it in bread bowls with cheese, sour cream, and of course cilantro! My biggest achievement was an heirloom tomato bruschetta salad on top of mozzarella melted on roasted garlic bread! I will have to start taking pictures of my food from now on.
The cabin was great, the people there with me filled it with so much love and friendship I did not want to leave.
